1 Sweet Potato
1 Apple
Chopped Ginger
Cinnamon
Fat

1.    Set up your grill with a basic two zone direct grilling. Wash your apple and sweet potato. you can peel them if you want. I prefer not to.

2.    Chop the sweet potato and apple into wedges or fries. You want them bigger than shoe strings but smaller than steak fries. Try and make all the pieces as close to the same size as possible.

3.    Add cinnamon and ginger. I use just a sprinkling of cinnamon and less than a tablespoon of ginger. You can use minced, fresh, or chopped. I like chopped. Add in a little bit of fat. A few pats of butter or coconut oil work great. I used bacon grease.

4.    Wrap up your little packet of magic goodness in a few dense layers of foil. the tighter you can get this wrap the easier it will be to flip.

5.    Place directly on coals and cook for about an hour flipping them every 15 mins. There should be a good amount of char and caramelization on the potato and apple. If they aren't done enough for you just throw them back on. If they are cooking super slow you'll need to replace your coals about every hour.

6.    Optional* Sprinkle with a little blue cheese. I love the "Moody Blue." Its a very smokey cheese that has an almost bacony flavor.
